
Creamy Instant Pot Mashed Sweet Potatoes

Mashed sweet potatoes have never been better. This recipe is a lighter version of the famous sweet potato casserole which is usually topped off with marshmallows. These mashed sweet potatoes are made in the Instant Pot. They’re creamy and instantly melt in your mouth. They’re also full of flavor from the herbs and spices used. These potatoes are about to be your new staple for Thanksgiving. Let’s make them!
Timing Is Everything
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients
2 1/2 lbs sweet potatoes (about 6 large potatoes) cut in 1 inch chunks
2 1/2 teaspoons kosher salt
1 garlic clove
2 tbsps unsalted butter at room temperature
1 cup milk (I used fat-free but you can use whatever you’d like)
1/2 black pepper
1 tbsp fresh herbs chopped (rosemary and thyme are great in these)
1 tsp spices (cinnamon, nutmeg, pumpkin spice) & keep cinnamon or pumpkin spice on stand-by for garnish
Let’s Get Cooking
Cut up 2 1/2 lbs of sweet potatoes in 1 inch chunks. Fill up 3/4 of a measuring cup with water. Heat in the microwave for 30 seconds or until very warm. Place water in the bottom of your Instant Pot. Stir in 2 tsps of kosher salt until it dissolves. Insert the steamer basket and place the sweet potatoes chunks inside the basket. Cover and cook for 8 minutes on high.
Once the timer goes off, release the pressure. Drain the potatoes and any excess liquid from the pot. Place the empty pot in the Instant Pot. Turn on the SAUTE function. Melt 2 tbsps butter. When the butter is melted, add 1 clove of garlic until it becomes fragrant. We don’t want burnt garlic.
Mashing the Potatoes
Turn off the Instant Pot. Add your potatoes back into the pot. Add the 1 cup of milk, 1/2 tsp kosher salt, herbs, and spices. Make sure to incorporate well.
Next, grab an electric hand mixer. Beat the potatoes on medium speed until the ingredients are combined and have a smooth consistency. Make sure not to over mix. If you don’t have a hand mixer, you can use a potato masher or the back of a wooden spoon.
If you’re making these a day early, place the mashed sweet potatoes in a large tin foil container and cover with foil. Top with cinnamon or pumpkin spice for color. Heat for 20 minutes.
